Almond Filling for Almond Croissants
Bake Croissant ( ready made Croissant sheets )
Line black tray with grease paper.
1 frozen sheet cut into 8 croissants.
Let it proof for 2 hours or until double in size.
Brush with egg wash ( 1 beaten egg )
Preheated oven 200°c bake for 30 mins.
Almond fillings
A
100g Butter
80g sugar
B
2 eggs
C
100g Almond meal
D
1tbsp flour
Almond Essen [ optional ]

Almond flakes
* Cook sugar water set aside to deep Croissant.
* Beat A until fluffy add in B beat to mix well and add in C and D.
* Cut Croissant into half. Brush simple syrup/ sugar water on the Croissant and pipe Almond fillings cover top half croissants and pipe Almond cream and put some almond flakes by pressing a little.
* Bake 200°c for 20mins. I added 230°c 10mins to brown the top.
* Dust with icing sugar and service warm.
