Malaysia Viral Chocolate Cake #2

 




I've made these countless time, this is still the best chocolate cake ever and never get enough of it.

A
1 canned 380g/390g evaporated milk
1cup sugar
1cup coco powder
1cup oil
1/2cup condensed sweetened milk ( if you do not like sweet you may omit it )

In a sauce pan or nonstick pan, low heat all in ingredients A, whisk with hand whisk slowly until sugar melted and off fire. U don't need to cook this to hot stage, the purpose is to melt the sugar. When everything combined shinny with no lumps. Off fire and set aside.

B
3 large eggs or 4 medium size eggs
1tsp vanilla essence 

C
1 & 1/2 cup flour
1tsp baking powder
1tsp baking soda

In a mixer, speed 3 beat B until foamy. Just beat until foamy not volumn. Add in ingredients A at once, mix well with speed 2 or 3 until combine just took few second and add in Ingredients C. Beat with speed 2 or 3 Mix well just combine.

Pour batter into line pan 20x20 / 8" pan. Line pan, grease paper must be taller than pan at least 5cm.

Bake 160c or 170c 60-80 mins.

When cake is done. Leave the cake in the pan to cool like 80% You may prepare the ingredients for ganache. 

250g whipped cream / non-dairy Topping Cream 
300g compound dark chocolate
1tbsp butter

Heat cream and pour into chocolate. Mix well and add in butter mix to.combine. when chocolate is shinny smooth pour onto the cake. Leave to cool and chilled for 2 hours before served.

Note: this cake maybe sweet for people who do not like sweet cake. So make sure u buy ur dark chocolate for ganache good chocolate that contain less sugar or non sugar that goes well with topping cream or u can use whipping cream without adding sugar if u use chocolate that contain high in sugar.
