Peach Frangipane Tart
I've baked a delicious Peach Frangipane Tart, would like to share with u all since I haven't post anything for months.
This is not some viral dessert, it's old fashion dessert but I would say this is the best dessert after a heavy meal. A sliced of warm tart goes well with vanilla ice cream.
Sweet Shortcrust :-
100g unsalted butter ( soft to touch)
30g powder sugar
1 large egg
200g flour
40g almond meal
* Use a fork, combined dry ingredients ( flour, almond meals, sugar ) mix well. Rub in butter mix well. Add in 1 egg mix well and form a dough.
* Round into a disk, wrapped with cling wrap, chilled for 30 mins.
* After 30 mins, roll out dough. Grease 20-22cm x 4cm tart round pan ( side and line base). Poke holes on crust. Blind baked 200c for 20 mins.
* Once baked, removed from oven set aside.
Almond Cream Filling:-
120g unsalted soft butter
120g granulated sugar
3 large eggs
160g Almond meals
30g flour
1tsp vanilla extract
1/4tsp almond extract
1 canned Peach Halve/sliced
2tbsp Almond flakes
* Hand Whisk/mixer - beat butter & sugar until fluffy, add in egg one at a time beat until well combine.
* Add in almond meals + 30g flour, vanilla+almond extract, mix well with a spatula.
* Pour Almond cream filling into warm crust and arrange cutted peaches on top. Sprinkle some almond flakes.
* Bake 190c 1hr 30mins. Last 5 mins grilled mode to brown the top.
* Once cool, dust tart with powdered sugar/icing sugar for your own liking.
* Served warm with vanilla ice cream or whipped cream.
