Red Velvet Sponge Cake with Creamcheese Frosting #2






Red Velvet Sponge Cake 

A
6 large yolks
B
70g oil
100g milk
1tsp vanilla 
1tsp vinegar 
2tsp red colouring 
C
80g flour
10g coco powder 
12g cornflour 
1/4tsp salt
D
6 large egg whites 
100g sugar
1/4tsp cream of tartar

* Grease and line 8" round pan or 2x7" round pan.
* Beat A until lemony, add in B one by one oil, milk follow by vanilla, vinegar and colouring. 
* Add in C sieved flour mix with spatula. 
* Beat D until stiff peak fold into batter 3 times. 
* Steam bake at 170°c 1 hour center rack.
* Remove from oven let it cool before Frosting.


Creamcheese Frosting A or B:-

A ( more cheese)
226g Creamcheese 
80g powder sugar 
1 1/2cup heavy cream
1tspvanilla

B ( less cheese )
70g Creamcheese 
1/4cup powder sugar 
240g heavy cream 
Vanilla 

* Beat cream cheese + sugar + vanilla until fluffy.  Add in cream Beat until stiff set aside to frost.
