Onde-Onde Cake
Pandan Cotton Cake
(Old Oven no fan-forced)
A
120g Cake flour
1/2tsp Double active baking powder
1/2tsp salt
6 egg yolks
70g veg oil
50g milk
50g pandan juice
B
6 egg white
70g sugar
1/4tsp COT
Method:-
* Line Cake base, no grease side (2×).
* 160°c Preheat oven.
* Heat oil, add in flour, add milk, pandan juice, gradually add in egg yolks until smooth.
* Beat egg whites until firm peak.
* 2 aluminum pan ( water Bake) steamed.
* 160°c Bake center, after 30 minutes, rotate pan,
* Bake 1 hr 10 minutes.
* Removed from oven to cool. Cut Cake into 4 layers. Assemble the cake 1st layer with thin layer of pandan buttercream and sprinkle of grated coconut and layer 2nd the same filling. Cover the entire cake with buttercream.
Pandan Swiss Meringue Buttercream:-
5 large egg white
133g sugar
300g butter
Pandan paste
Filling:-
250g gula melaka grated coconut
50g white grated coconut
Gula Melaka Syrup:-
50g gula melaka
25ml water
2 pandan leaf
