Taiwanese Castella Cheesecake

 


This recipe originally was plain with no cheese, I try adding cheese powder instead of cheese slices. So there you go, result was good.  No cracks top, rise perfectly. 

This recipe adapted from gracious treatz on Utube.  Original recipe has no cheese.


Taiwanese Castella Cheese Cake
18x18cm

A
80g butter 
120g milk
B
105g flour
C
6 large egg yolks
1tsp vanilla
D
6 large egg white
100g sugar 
1/4tsp cream of tartar

* In a pan, heat A to warm level. 
* Add in B with hand whisk while still warm. 
* Add in C mix well set aside.
* Beat D egg whites to soft to stiff peak, fold into batter with a spatula. 
* Seperate into 3 equal bowls. 
Pour 1st bowl of batter into pan, sprinkle cheese powder, pour 2nd bowl batter and sprinkle cheese powder. Lastly pour 3rd bowl batter and sprinkle cheese powder.
* steambake method.  Get a larger pan with hot water, put a strainer in the middle. Put baking pan on the strainer.
* New Oven- (fan mode) Bake 170c°c 20 minutes, bake again 150°c 80 minutes.
* Once it's done, remove from from oven. Tap twice on the table prevent from shrinking. 
* Allow to cool and remove from pan.
