Non-alcoholic Fruit Cake
22cm square pan

Soaking fruits:-
3cups orange juice

Cake recipe:-
A
225g butter
210 brown sugar
B
3 large eggs
C
1 orange juice
1 orange Zest
1 lemon Zest
35g / 3tbsp artificial Rhum
D
600g mix fruits 
100g prunes
100g apricots
100g walnuts
100g dried cherries candied
E
260g flour ( removed 3-4tbsp for D coating )
75g almond flour
4g/1tsp baking powder
1/2tsp salt

Method:
* Soak fruits over night. Total weight 1008g fruits. 
* walnut toast in the oven 180°c 15 minutes. 
* the next day coat fruits with flour, set aside.
* In a large bowl beat A until light and fluffy.
* Add in B one at time.
* Add in C mix to combine.
* Fold in E mix well,
* Fold in flour with a spatula.
* Pre-Heat oven 160c
* Grease and line pan, top with cherries and pecans.
* Bake 150°c 90 minutes and increase to 160°c 60 minutes until golden brown. 
* Once it's done, remove from oven let it cool to room temperature before chilled. 
* Brush fruit cake with left over (orange juice+rhum from fruit soaking ).
