Malaysia Satay Chicken & Peanut Sauce

 


Malaysia Satay Chicken Recipe:-

Ingredients:-
2 boneless chicken breast 

Blend Ingredients for marinating:-
2 shallots
2 garlic cloves
1 thumb size turmeric/ kunyit
1 thumb size galanga/ lengkuas
1 lemongrass / serai
1/2tbsp Cumin powder / jintan manis
1/2tbsp coriander powder / ketumbar 
3tbsp sugar
Salt
1tbsp dark soya sauce 
3tbsp Cooking oil 

Condiments:-
Slice shallots
Cubes cucumber 

Method:-
* Cut chicken into cubes.
* blend everything and marinate chicken for 1 hour.
* Soak satay Bambu stick in water for 30 minutes. And skewer chicken accordingly. 
* grill chicken according.
* Serve with peanut sauce, cut cucumber, shallots and ketupat.


Peanut Sauce Recipe:-

Ingredients:-
1 cup Peanut 

Blend:
4 candlenuts
2 shallots 
1 garlic
5-6 fresh chili

Taste:-
Water
ketumber powder
Tamarind Juic
Sugar
Gula melaka
Dark sweet soya sauce
Salt

* Heat wok with oil, fry Peanut and blend finely. 
* Blend ingredients into wok, sautee until aromatic add in some water enough to cover Peanut adjust accordingly.  Add tamarind juice, gula melaka, salt and little ketumbar powder and taste. 
* when taste is perfect, dish up and serve with grilled satay.
