Indonesia Padang Style Grilled Fish
Method:
* 1st butterfly fish, clean and marinate with 1 whole lime/Jeruk nipis or calamansi/kasturi, shallots, garlic, galanga, ginger, turmeric, salt and vinegar for 10 to 15 minutes.
* get ready grill marinating sauce: - 1 cup coconut cream, chili sauce 4tbsp, blended ingredients 6 shallots, 3 garlic, galanga, 2 kasturi.
* Set aside for grilling use.
* transfer fish to grilling equipment.
* Heat the grill, grill fish without marinating sauce until fish turns dry.
* brush a thin layer of marinating sauce on fish both side and continue grilled until sauce dry up and brush 2nd marinating sauce grill fish both side until it turn char nicely.
* dish up and serve with chili sauce.
