Tausa Piang & Red Bean Paste

 






This one of my favorite childhood piah, which I have so much memories of my late dad, because this is his favorite too. I remember he always ask mom to get him this like 10 pcs every Wednesday at a small town name Tamparuli. And that's how it became my favorite too. 

Since I stay here in Indonesia,  getting this pastry is impossible and that's how I started to make my own. I make red bean paste from stretch too. Always good to make our own, sugar level is just perfect not too sweet. 

This recipe make only 7pcs of piah. Yes due to a small family of mine that can't be finished if I make a big amount of piah.

Tausa Piang Recipe:-
7pcs 

Water dough
100g flour
30g shortening
15g sugar
50g water

Oil dough
75g flour 
50g shortening 


If you use hand will be sticky, so use a fork to mix water dough until all comes together and use hand to shape it into a ball set aside. Same with oil dough. 

Water dough is bigger than oil dough. 

Roll both into long shape, cut both dough into equally 7 pcs.  This recipe can go double for a full 14pcs or more piah if you require. 

Take 1 pc water dough, pull and flatten with hand and take 1 pc oil dough, put in the middle of water dough and wrap it, round into a ball. Set aside, repeat until finish. Cover and Rest for 20 mins. 

Dust surface , take 1 dough, use a rolling pin to roll out into rectangle shape. Roll it up into Swiss roll. Rotate position, use a rolling pin to roll out again into rectangle and roll up into Swiss roll for the last time. Cover with a cloth and set aside let it rest. 

Dust surface, take the 1st roll and flatten it, use a rolling pin to roll out circle.  Fill 1 portion of filling red bean in the middle and seal it tightly. 

Fold the dough into ball, put on line baking tray, gently use ur hand to press the piang lightly or use a rolling pin to flatten it. 

Take a fork, poke the piah lightly.  Brush egg wash ( 1 egg yolk mix 1tsp water, or oil) on top of piah and sprinkle sesame seeds is optional.

Bake at lower rack, 180°c for 40 minutes until golden brown. 

Red bean paste 



Filling Red Bean Paste:- 

500g red bean 
1/2 cups Cooking oil
1 1/2 cups sugar
2-3tbsp glutinous rice flour 
3-4tbsp maltose sugar

* Soak red bean for 1-2 hours, cook them until soft. In a food processor or blender, blend red bean into paste and set aside. 
* In a non stick pan, add in cooking oil follow with red bean paste, mix well then addin sugar, Maltose sugar mix well, let it cook.
* keep stirring and add in glutinous rice flour.
* when the red bean paste is cooked, it will no longer sticky. Please pay attention to the consistency of the paste while you keep stirring on the entire cooking process. 
* If there is not enough oil, sweetness, you can keep adding until the consistency you want.
