Steamed Talam Tapioca Kue
Kue Talam Tapioca, who love this comment below π. Waiting to cut this kue like 8 hours, for it to cool down, thats the longest I've ever waited. It's a big and tall kue can feed the securities, friends and neighbours π
Steamed Talam Tapioca
Pandan Layer (A)
450g-500g grated tapioca
150g coconut cream
50g water
50g pandan water
125g sugar
2tbsp Tapioca Flour
1/4tsp salt
Drop of pandan paste
Gula Melaka Layer (B)
450g-500g grated Tapioca
150g coconut cream
100g water
175g gula melaka
2tbsp sugar
2tbsp Tapioca Flour
1 pandan leaf
Talam White Layer (C)
350g Coconut Cream
150g Water
100g Rice Flour
2tbsp Tapioca Flour
2tbsp sugar
1/2tsp salt
* i use coconut cream not coconut milk ok guys.
* as u know coconut cream is thicker, so this recipe already added water in every layers. If incase u use coconut milk. Then used this measurement,
* pandan Layer- 200g coconut milk ( omit water 50g)
* gula melaka layer - 250g coconut milk ( omit water 100g )
* talam Layer- 500g coconut milk ( omit 150g water )
* For those who like less sugar kue, you don't need to cut down sugar measurement for this recipe because this kue sweetness already perfect. Trust me I don't like overly sweet kue too.
Method:
* A - in a bowl, add coconut cream, pandan water, sugar and water whisk until sugar all fully melted, add in tapioca flour, salt, padan paste mix well. Add into grated tapioca.
* Heat steamer in medium high heat.
* I used 18x18cm little not enough for talam Layer. So 20x20cm square pan is prefect. Grease and line with banana leaf and grease the leaf.
* Pour Pandan Tapioca Layer and let it steam for 30 mins.
* While Pandan Layer is steaming, prepare B gula melaka layer.
* In a sauce pan, add water, coconut cream, gula melaka, sugar, pandan leaf, cook in low fire until sugar melted, sieve. Discard pandan leaf and pour into grated tapioca mix well, add Tapioca Flour and mix well.
* After pandan Layer is cooked, gently pour gula melaka layer on too of pandan layer, let it steam for 30 minutes.
* while steaming gula melaka layer. Prepare Talam layer.
* In a clean bowl. Add in C everything, whisk to combine. Sieve set aside for steaming.
* When gula melaka layer is cooked.
* Steam Talam 2 times so that it cooked evenly.
* use a soup ladle scoop 3-4 scoops on top of gula melaka layer let it steam for 10 minutes,
* After 10 minutes open lid, pour the balance talam steam for 15 minutes and done.
* After cooked, removed from steamer let it cool over night. .
* The top layer is the Talam Layer. But I put it upside down. And it's your personal preference how u want your kue to look or to cut.
* Cut when kue is totally cool down.
