Lidah Kucing Cookies

 





Lidah Kucing or Cat Tongue is made of specially from egg whites commonly found in Indonesia.

This cookies is a must have during the Raya's festival.  Of course is one of my favorite cookies too. It's very light and crunchy. 

Today people are so creative with colours and flavors. You will see a lot of this cookies with all kinds of colors and flavors, from green pandan, chocolate, taro, greentea, to red velvet. Topping with cheese, almond flakes etc. The below recipe I shared is original ones and classic Lidah Kucing and like I said you can turn them into any colors and flavours you like by adding paste. 

To bake this cookies, here in Indonesia sell Lidah Kucing baking pan. So it has it own baking pan to give a good looking shape after baked. So if you plan to bake this, make sure you get 2 or 3 Lidah Kucing pan before you do so. 


Classic Lidah Kucing Recipe:-
( For 500g )

A
125g butter
125g margerine 
140g powder sugar
B
100g egg whites
C
200g flour
50g maizena
1tsp vanilla 


Lidah Kucing Recipe:-
( 1kg ) 2xrecipes

A
250g butter
250g margerine 
28g powder sugar
B
200g egg whites
C
400g flour
100g maizena
2tsp vanilla 


Lidah Kucing Recipe:-
( 1kg + 500g ) 3xrecipes

A
375g butter
375g margerine 
420g powder sugar
B
300g egg whites
C
600g flour
150g maizena
1tbsp vanilla 


* Beat A until double volumn.
* Add in B one at a time until fully mix fluffy and combine.
* Add in C mix well.
* Transfer cookies dough into large piping bag. 
* Grease Lidah Kucing pan with margerine or butter.
* Pipe on the pan on every shape accordingly. 
* Bake at 160°c 40 minutes. Rotate pan every 20 minutes. Bake 2 trays at once.
* Remove from oven, let it cool store in air tight container.
