Kue Wajik Legit

 



Have about 350g glutinous rice going to expired. So make this simple kue wajik, quick and simple, not much ingredients needed to make this. I make this twice in my life.   However this one is super yummy and soft.

A
350g glutinous rice ( after soaking for 3 hours rice weight 502g ) 
250g coconut milk
Pinch of salt
Pandan leaf

210g gula melaka
Pandan leaves

* for ingredients B, I used 250g of coconut milk and 250g gula melaka. I find it too sweet so I reduced sugar above recipe and coconut milk I reduce too bcos I have left over.  I hope 210g is an accurate amount for the above recipe.  

Method:-
* Soak glutinous rice for 3 hours.
* Discard water, steam rice for 15 minutes
* While the rice is steaming, prepare the coconut milk+salt in a bowl. 
* When 15 minutes done steaming, add coconut milk into glutinous rice mix well with chopstick. Top with cutted Pandan leafs continue steam for another 25 minutes.
* Get a clean wok/sauce pan. In a medium heat, add in coconut milk and gula melaka+Pandan leaves, cook until sugar melted to a boil and off fire immediately sieve the sugar coconut milk into a bowl. 
* Now return the sieved sugar coconut milk into the wok/saucepan. 
* Remove done glutinous rice from steamer, add into the sugar coconut milk mix well. Keep stir until the sticky rice sugar coconut milk almost dry. 
* Transfer into a 20x20 pan. Line pan with banana leaf or plastic. 
* Press the rice firmly and let it cold to room temperature or keep over night.
* Best to cut cool kue that has been set over night or at least 3-4 hours.
