Kue Bangkit
I have no idea why this cookies have been named kue, but it's cookies. Well in Indonesia, they do called cookies kue but not just kue, cookies is kue kering and for traditional kue or cake, they usually called it kue basah. But again this kue bangkit does not specifically called it kue kering so is confusing 🤔
Kue bangkit originally found in the malay community, and it's available in he Malaysia , Brunei, Indonesia and Singapore.
Kue Bangkit
( bake with old oven no fan-force)

500g Sago flour
B
140g coconut cream
150g sugar powder
2 yolks
1/2tsp salt

Few pandan leaves

Method:-
* In a wok, toast sago flour A&C until like and airy. Dish up set aside, discard pandan leaves.
* In a mixing bowl, beat yolks and sugar until light, add in half coconut milk and mix well.
* In a seperate bowl, add in A plus salt. Knead with hand and add in B, add the remaining coconut milk slowly into the dough mixture.
* Dough should be sandy. Put it into a molder.
* knock it out.
* Bake at 160°c for 4o minutes.
* Remove from oven, let it cool and store in air tight container.
