Durian Bake Cheesecake
This is one scrumptious durian cheesecake I ever had! Thick, tall and beautiful. I used 7" removable spring pan, so that cake could raise taller.

7" removable spring pan
Base Cookies:-
150g cookies
70g melted butter
Durian cheese filling:-
A
250g durian meat
B
400g cream cheese
250g cream
120g sugar
100g plain yogurt
2 large eggs
2tbsp cornflour
1tsp vanilla
Base cheesecake method:-
* In a food processor, add in cookies until fine sand add in melted butter.
* Pour into prepared ring pan that has already wrap double with cling wrap on the bottom. For inside pan, line plastic around.
* Press the base cookies firmly bottom and side.
Filling cheesecake method:-
* Beat cream cheese and sugar until fluffy.
* Add in sour cream/yogurt follow with cream, mix well until smooth.
* Add egg one at a time.
* Add in cornflour, vanilla.
* Lastly add in Durian meat, mix well.
* Use a large square pan, pour hot water. Line grease paper on 7" spring pan, double cover pan with aluminum foil.
* Pre-Heat oven 180°c with water.
* Bake waterbath at 180°c for 30 minutes.
* Turn down temperature 150°c for 45 minutes. Bake at center rack.
* Last 20 minutes grilled mode to brown the top.
* Let the cake inside the oven for 1 hour with the oven door slightly open. * After 1 hour, remove from oven let cheesecake cool before chill for 4 hours or overnight.
