Sinful Pineapple Carrot Cake with delicious pecans. 

This is my all time favourite cake which i make once or twice a year.  

When comes to this cake i either use pecans or walnuts both taste good but pecan is the best ... I love how aromatic it is with cinnamon and I love the smell when we bite all that pecan cinammon carrot making magic in our mouth, just so delicious and soothing.

Recipe:-

A
4 large eggs
180g brown sugar
(if u like sweet, can add up to 200g used half granulated sugar half brown ) 
B
240g vegetable oil
1 tps vanilla extract
C
260g all-purpose flour
1 tsp baking soda
1 1/2 tspbaking powder
1/2 tsp salt
1 1/2 tsp ground cinnamon
D
150-200g toasted pecans ( toast 180c,  10mins, half for deco whole & chopped and half to mix into cake batter) 
340-350g grated carrots
1 cup fresh chopped pineapple

Method:

In mixer,  Beat A till thick almost to ribbon stage. Add in B gradually.  Add in C one at a time just to combine.  Add D with a spatula. 

Pour batter in 2x7" round pan lined base n side. 
Bake 180°c for  90 minutes or until toothpick come out clean. 

Oven temperature range can be vary. So bake at ur own oven temperature accordingly.

My frosting creamcheese is about 250g CC and the rest of the ingredients (lemon juice,  powder sugar,  butter)  according to my taste no measurement.
