Apple Pie
9" Short Pie pan
Shortcrust :-
310g flour
180g cold butter
58g cold water
50g icing sugar
Egg wash:-
Egg yolks + milk
Filling:-
980g-1kg red apple
1 1/2tbsp cinnamon powder
1cup brown sugar
2tbsp sugar
1/2 cup water
Zest of lemon juice
2tbsp flour
To make the filling:
* Cook apple until soft
* Add in flour to thicken
To make the crust:
* Mix together into disk, chilled before used.
* half the dough for base, and for topping.
* Make the top woven lattice pattern on silicon mat. Roll thinly and flatten crust, cut with a pizza cutter for about 24 strips. Arrange strips according to the size of 9"pan. Cut it round and chilled.
* take another half crust and add on the balance crust from strips. Mix together and roll out flat and place into 9"pan.
* blind bake pie crust 180°c for 20 minutes.
* Removed from oven, add cooked apple filling into Pie, transfer woven lattice crust cover the entire pie arrange neatly before brush with egg wash.
* sprinkle some granulated sugar on top its optional.
* Bake 190c for 80 minutes or until golden brown.
* last 20 minutes brush one more time egg wash.
* When it is cooked, remove from oven, let it cool.
* Serve warm or room temperature with scoop of vanilla ice cream.
