Kue Dadar/ Kue Ketayap
This is my childhood favorite kue. I get a little bore with green pandan and so I modified some into different flavours and colors. The purple is taro and blue is bluepeas plus blue color.
Kue Dadar / Kue Ketayap
24 pcs
Crepes:-
200g coconut milk
150g water / pandan water
150g flour
1 egg
Pinch of salt
2tbsp cooking oil
* Mix all dry and wet ingredients in one bowl.
* Heat up a non stick 6" pan.
* Use a kitchen towel dip with cooking oil. Gently grease the pan.
* Took 2 scoops of batter for patterns. Mix in color whatever u like.
* Scoop 80% full batter from a soup ladle. Pour into pan. Gently swirl batter around pan evenly as thin as possible.
* When the color of the crepe turns darker mean it's done and gently flip to the other side to cook for few seconds.
* When it's cooked, dish up and let it cool.
* To assembly the kue, scoop 1tbsp or 2 grated coconut onto the crepe, fold and roll it up and you are ready to served.
Grated Coconut Filling:-
350g grated coconut
4 pcs round gula melaka
2 pandan leaves
100ml water
Pinch of salt
* In wok with water and pandan leaves, add sugar. Cook until sugar melted. Add in grated coconut mix well and dish up set aside to cool.
