Ultimate Chocolate Cake #1




Ultimate Chocolate Cake
20cm / 22cm square pan 
( for 20 people )

A
150g all purpose flour
1000g dark cocoa powder
1 tbsp baking powder
1 tbsp baking soda
B
270g cold butter
270g sugar 
C
3 large eggs
1 1/2 tsp vanilla essence
D
300 ml evaporated milk 

 
* Sieve A set aside.
* Beat B until smooth.
* Add in C one at a time. Add vanilla essence.
* Add D and A mixture gradually, continue beating using low speed until done and fully incorporated. Scrape the sides with a cake spatula.
* Pour batter in grease and lined 20x20 pan.  
* Bake 170°c for 1 hr 30 minutes / 90 minutes. 
* The cake is done when a skewer or toothpick inserted comes out clean. 
* Cool on a wire rack. 
* Add chocolate ganache or top with Strawberries. Design n decorate however you like.

Ganache
450g Chopped Dark Chocolate 
375g Millac Whipping Cream

Heat cream and pour into chopped chocolate.  Stir till smooth. Wait ganache cool and thick consistency to frost the cake.
