Pandan Custard Layer Cake
Pandan Custard Layer Cake. I do not why feel so hesitate to make this cake, scary ehh.... But i have been waited for so long to make this, finally ive made it.
Not so perfect but at least ive tried. Enne Ty thank u for your beautiful 5 layers custard cake post, thats what push me to make this happen. 😅 i used cake ring instead of pan, infact i slide 6 layers cake but my cake ring still not tall enough for 6 layers.
I weight 1st layer 170g custard and following layers 140g, just to get an even layer so i do so.
For the first time i taste this cake seriously.. ....haaa its good. This cake suitable for elderly i can say.
Pandan Sponge Cake
2x7" pan
A
6 large egg yolks
60g oil
40g coconut cream
70g Pandan extract
1/4tsp salt
110g flour
B
6 egg whites
80g sugar
1/4tsp cream of tartar
* Mix A all in a bowl.
* Beat B to stiff peak, fold into A 3 seperate time until all well combined.
* Line base, side no grease.
* Bake 160°c 80 minutes. Steam bake method. I putted 2 aluminum cup with hot water corner of the oven. Bake on second rack.
* When it done, removed from oven, let it cool.
* Cut Cake in to 5 layers. I got a total of 6 thin layer cakes.
Pandan Custard
A
680g Pandan juice ( mix 1/4tspfresh pandan essence to 680g water )
2tsp agar-agar powder
90g sugar
50g butter
1/4tsp salt
B
240g coconut cream
70g white hoen kwe flour
2 drops of green n 2 drops yellow (optional)
* In a pot, add in A.
* Prepare B. Mix well.
* Heat A in a pot, low fire stir well and pour into B. Mix well, cook until its not runny but not too thick.
To Assemble the cake: -
* Prepare a 7" cake ring. Line side with a plastic cover.
* Pour 170g custard bottom custard layer, layer the 1st cake on top. 2nd custard layer 140g and continue until finish.
* Balance custard can make any shape for decoration.
* Place in the fridge chill, best set is over night.
* Remove cake and flip top to bottom. And there you have it, the top custard layer looks slightly thicker than the bottom layer.
