Rita's Old-Fashioned Butter Cake ( egg separation method)
This recipe it's my 1st ever butter cake that I ever known of when I was 15 with my sisters. This is a family butter cake that everyone's love back then. We used to bake it plain.
It's a huge cake that we bake with a 9" pan. Today I bake with 2 different pan. It rises beautifully. I stick to one plain and one marble butter cake. Simply yummy.
Rita's Old-fashioned Butter Cake
A
340g unsalted butter
150g sugar
B
9 eggs yolk
C
340g flour
2tsp Double baking powder
D
9 eggs white
100g sugar
1/4tsp COT
* Line base and grease side 6" and 9" round pan.
* Beat A until double in size.
* Add in B one at a time.
* Add C fold gently with hand mixer until well combined.
* Beat D soft to stiff peak. Fold 3 times separately into batter.
* Split into 2 bowl.
* Take 1/3 cup out from 1 bowl, mix with 1tbsp coco powder / chocolate paste mix well.
* In 6" round pan, alternately mix with white batter n use a butter knife to create the marble effect.
* For 9" just pour in the plain batter into pan.
* Bake 170°c for 70-80 minutes.
* Removed from oven and let it cool.
