Mango Roll Cake
This is one simple and delicious Birthday Roll Cake that I created for a friend.
This soft sponge cake is specially delicious that goes well with any fillings. I used a very simple and delicious filling, mango and whipped cream that so match with vanilla sponge cake.
Mango Roll Cake
24x24 pan
A
6 egg yolks
3 egg whites
40g sugar
1/2tbsp water
1/2tbsp SP / Emulsifier
B
50g flour
10g milk powder
1/8tsp Baking powder
C
30g melted butter
30g melted hollman margarine
D
1 sweet mango chopped into cubes
* Beat A until fluffy to ribbon stage.
* Add in B with hand whisk/ mixer.
* Add some batter to C and mix well. Then add into batter with a spatula fold gently and do not over fold.
* grease pan line base and side.
* Bake 190°c for 35 minutes. Last 15 minutes, rotate pan. Reach to last 10 minutes, i changed mode to Grill to brown the top.
* Removed from oven and let it cool.
* Fill Roll Cake with whipped cream and chopped mango. Chilled for 2 hours before cut.
