Lady Fingers Shortbread & Tiramisu
This is a very easy dessert. Authentic Italian Tiramisu! Creamy egg yolks, mascarpone cheese and of cos the yummest part is the homemade Lady Fingers! Everything taste better with homemade.
Homemade lady fingers are the Best compare to store bought, trust me!. You wont regret to make them for a good Tiramisu. Basically Tiramisu is very simple to make too.
Lady Finges Shortbread
A
3 egg yolks
20g sugar
1tsp vanilla
B
3 egg whites
70g sugar
C
90g all purpose flour
5g corn flour
1g / pinch baking powder

Powder sugar
Granulated sugar
* In a bowl, beat A with hand whisk or mixer until sugar melts n egg yolks are light. Set aside.
* Beat B until firm peak.
* Add A into B and mix well with whisk.
* Sift in C to the mixture of A&B, slowly fold in with spatula until all equally mixed. When its done, transfer to a piping bag.
* Line grease paper / silpat. Press down tip and pipe slowly until all finish with ur desire lenght and size.
* dusk with powder sugar coat 2 times and,lastly sprinkle with some granulated sugar.
* Preheat oven 190c. Bake 180c for 20-30mins. ( baking time is only a guideline, pls refer to ur own oven heat n duration of baking ) dont bake too long or else it will burn the top.
* Remove from oven to cool before removing cookies from pan, n transfer to airtight container.
* Left over can go well with a cup of coffee. Keep left over in the fridge or freezer to keep its crispiness.
Mascarpone Cheese Layer
2 egg yolks
45g sugar
2g vanilla
250g Mascarpone Cheese (room temperature)
180g Heavy Cream
For lady fingers dipping
200g-300g coffee
* Sabayon egg yolks n sugar, beat until light and thicken add vanila mix well. Set aside
* Fold in Mascarpone cheese to egg mixture mix/beat well with a whisk.
* Beat heavy cream to soft peak, then fold into cheese & egg mixture with a spatula. Ready to use.
Assemble Tiramisu:-
* In a glass bowl, dip lady finger into coffee instantly flip the other side. Pls dont soak the fingers just a quick dip.
* After all lady fingers layer, spread cheese on top of lady fingers. Repeat another layer. Refridgerate for 2-3 hours.
* Beat extra 180g whipping cream, pipe on top n dusk with coco powder to finish off. Ready to served.
