Handmade Golden Pineapple Tarts. π no added color pure egg yolks wash, I'm happy with no cracks.
Baking time is short. But the whole process is really long and tedious.
Baking tarts need lots of patience and time. As the process of baking not one go.
You dont need my special pineapple tarts to do this, basically just use you regular pineapple tarts recipe and apply this process.
Method of Shinny tarts:-
First process is to bake the tarts without egg wash, 150°c for 40 mins at the middle rack.
After 40 minutes done, then egg wash (3 egg yolks+2tbsp oil+ 1tsp corn syrup or condensed milk or honey)
Removed from oven, let the tarts totally cool down to room temperature then egg wash twice.
This is to prevent wash from peeling off the tarts, so have to ensure the tarts really cool off then brush them with yolks wash.
Bake again at the lowest rack for 130°c 20 minutes.
If u find ur tarts still cracks, means ur oven temperature still high.
I used to bake my tarts in one go egg wash and bake till done. More brown and aromatic. Anyway, both are good.
