Durian Roll Cake #1

 





Durian rolls. I believed many of u have your own recipe for roll cake. And probably many of you hate roll cake because stressing out on the rolling part. 

Here I want to share my method of rolling to get a nice and satisfying roll cake with skin on. 

* first of all, bake cake on high temperature 180°c - 190°c, 30-35 minute. Last 5 minutes to brown top, this step will keep the roll skin intake during rolling.

* Removed cake from oven, unmould from the pan to cooling rack. 

*Get a good quality clean grease paper, lay paper on top of the brown skin side. Turn over the hot cake and removed grease paper from cake bottom.  

* Now skin is facing down with the clean grease paper, immediately roll cake while it is still hot/warm. Do not roll cake too tight while cooling at this stage.

* Set aside until it has come to room temperature around 30mins. Or u want to blow with a fan to speed up the cooling process.

* when the cake is cool.  Gently roll out the cake, do not force cake to flatten, u may see cake a little curvy, is ok.. Just gently push a little with finger, fill whipped cream and durian on the cake, after all filled up. 

* Gently roll cake into position and chilled.

* 1 hr already can cut and served if u want too. or cilled overnight to let it set properly. 

* to cut the cake nice and clean. Get a sharp knife cut each slice and clean knife with tissue or clean cloth.


Cake Roll Recipe

A

5 yolks

30g sugar

Drop of vanilla

B

40g milk

40g oil

C

70g flour

10g cornflour

D

5 whites

30g sugar

Little COT


* Preheat 190°c 

* Prepared & line pan 30x30cm.

* Beat A till light n fluffy.

* Add B mix well, follow by C mix well.

* Beat D till soft to stiff peak.

* Fold in D into yolk batter 3 separate times throughly. 

Bake 190°c 40mins. Bake last 5 minutes grill to brown top.

* Removed cake from oven immediately roll cake when it still warm, roll lossly.

* unroll cake when cake is completely cool. Fill with durian whipped cream and roll it tightly and chill before served.
