Deedat's 12th Birthday Zebra Butter Cake
Butter Cake is my boy favorite. He requested a Zebra Butter Cake for his 12th birthday. So I make him a small one ππ.
But however I did some modification which I mixed some margarine instead of full Butter. As I know that if we mix with margarine, cake tend to become softer.....and yes, cake turned out very soft and delicious indeed.
Whether u like it or not with margarine, it's always great to try and taste new flavour and texture.
Zebra Butter Cake
A
185g Golden Churn unsalted butter
35g Royal Krone substitute butter
30g Blueband margarine
80g sugar
B
5 eggs yolk
C
100g fresh milk
1tbsp vanilla
250g flour
2tsp Double baking powder
D
5 eggs white
100g sugar
1/4tsp COT
E
15g coco powder
1tsp chocolate paste
* Line and grease base and side 22cm square pan. If you want a taller cake, you can use 18cm pan.
* Beat A until double in size.
* Add in B one at a time.
* Add C fold in alternately milk & flour until well combined.
* Beat D soft to stiff peak. Fold 3 times separately into batter.
* Split into 2 bowls, 1 bowl add in E mix well.
* In 22" pan, scoop 2tbsp of white batter, and continue with chocolate batter, layer on each other until finish. You may tap the pan when half way through to spread the batter coverage of the pan.
* Bake 170°c for 90 minutes. Lower rack.
* Removed from oven and let it cool.
