Buttermilk Buns

 



I think I haven't make bread for half a year. Craving for buttermilk buns, so I pick hand kneading sweet bun dough recipe, one of the recipe I used for redbean buns.  

The result is so satisfying indeed, soft and fluffy so delicious.  Egg wash perfectly golden too. I love it.   

Seriously I always never expect that I'm good in bread making, but I'm not ashamed with my hand kneading skill though. Should proud of myself more sometimes πŸ˜πŸ˜†.   This round shaping them like kopitiam buttermilk buns, turn out not bad looking too. 

So fast, easy and very delicious cheesy garlic bread stick. Anyone can make especially for beginners. no machine needed to knead bread dough just use hand. 

Let's make the filling first. 

Buttermilk Filling Recipe:-
100g Butter
70g powder sugar
1 small egg
30-40g cornflour
100g milk powder

Method:-
Beat butter until double in size, add in sugar until well combine.  Add in egg mix well follow with corn flour and milk powder mix well to combine.  Let it chill for 1hour and it will be ready to use. 


Sweet Bun Recipe
A
260g cold milk
5g instant yeast
55g sugar
2 eggs 
5g salt
B
562g bread flour
C
74g soft butter

Method:-

Mix A with whisk, follow with B combine and knead just a second with hand, it will be little sticky at this point. Cover with lid and let it rest for 20 minutes.

After 20 minutes, transfer to counter table lightly knead until it is not sticky and smooth add C continue knead until windowpane, transfer into a bowl cover with lid and rest for 60 minutes. 

After 60 minutes, round shape dough into 12 pieces. 

Took 1 round dough, lightly roll into square, fill with buttermilk and shape it into a cylinder shape.  Place into baking pan and rest for 45 minutes for final proof.

After 45 minutes, egg wash (2 egg yolks + milk). 

Bak at 190°c for 40 minutes. Bake until it is golden brown. Remove from oven Brush buns with melted butter.
