Butter Loaf Cake with Blueberries Topping ( whole egg method )








This is most beautiful butter cake I have ever seen. So perfectly tall with fine crumbs. 

This is the same recipe as Zebra Butter Loaf Cake. 


Butter Loaf Cake 

A

250g butter

180g sugar

Drop of Vanilla

B

 5 large whole eggs

C

210g all purpose flour

1/2tsp Double baking powder


(note: for those who cant take too sweet or doesnt like sweet at all, u may reduce sugar to 160g, i have tried bfore, cake just nice, little touch of sweetness )

Method:-

Line pan with grease paper base and side. Ensure to line the side with a little extra taller than pan.

Beat A until double volumn, add in B one at a time beat until double volumn, add C half of the flour and add the rest of the flour, mix well only, dont over mix. 

Pour batter into pan, too with blueberries.

Preheat and bake 170°c - 180°c, middle rack for 95 mins.
