Red Top 9 Layers Kue 九层糕 #1
9 layers kue lapis is one of my favorite childhood kue. This time I nailed it with that RED. I super like the red on top. Sometimes the camera just cant go right with color 😁😁.
I have made this several times, mostly smooth top but once bubble top. Even this time I stirred and sieved still not so perfect smooth top.

Red Top 9 Layers Kue Recipe
18x18 square pan
A
150g rice flour
150g tapioca flour
B
450g coconut cream
200g sugar
1/2tsp salt
Knot Pandan leaves for flavour
C
100g Pandan juice
100g water
100g pink colouring
1 drop of light red & 1 drop of dark red colouring for last layer from bowl of pink
Method:-
Grease pan 18x18 with cooking oil and set aside.
Cook B on slow fire until sugar melted just warm. When it's cool, mix A into B. Devide into 3 bowls, each bowl around 200-300g.
Mix each bowl with one portion of Pandan juice, water and pink color. Divide each colour/ flavor into another 3 portions each about 135g each bowl.
3 green bowls
3 white bowls
2 pink bowls
1 red bowl
Heat steamer, let the pan steam together with steamer.
Stir and sieve batter before steam. 1st layer Pandan, then pink followed by white, steam each layer mixtures for 5-6 minutes alternatively until complete. Steam the last layer (red) for 10 minutes.
Leave the cake overnight at room temeprature before cutting.
