Kue Ketayap / Kue Lenggang

 







I remember when I was kid, waiting for my auntie to make is kue at night randomly is like waiting for the rain to come...πŸ˜†πŸ˜......it's one of my favorite kue.  I have some alone time sitting n remembering those days, so get to the kitchen and make some of this with little modification....as u can see right. 

This is easy peasy kue to make, this recipe make 10 crepes enough for 2-3 people.


Crepes Recipe for 10pcs :

150g coconut milk

113g water or pandan juice 

1 egg

113g flour

1tbsp cooking oil

Drop of pandan paste ( if use pandan juice then paste not needed )

* U can use thick coconut cream from the box too, just add water to make it more watery. 

* Heat pan, in low heat, use a non-stick pan.

* If you make pattern. Cut the tip of the piping bag, spread chocolate batter on the hot pan, immediately scoop pandan batter and swirl it evenly cover the entire pan.

* Let it cook a 1 minutes or so and dish up. 


Coconut Filling for 20 crepes :- 

300g-305g grated coconut

199g/3pcs cylinder gula melaka

2 pandan leaves

75g+ 2tbsp water


* in sauce pan, in water, pandan leaves and  sugar, cook sugar melted, add in grated coconut  mix well. Dish up let it cool to room temperature.

For the pattern, take few tablespoons of green batter mix 1tsp of Chocolate paste. Fill into a piping bag.
